High Protein White Bean Chicken Chili with Skyr

A creamy, comforting white bean chicken chili made lighter and higher in protein with Vars Skyr. It is an easy weeknight meal with tender chicken, cannellini beans, green chilies and a creamy skyr finish.
Ingredients
1 cup Vars Skyr
3 tablespoons canola oil
¾ cup chopped yellow onion
1 teaspoon minced garlic
450 g boneless, skinless chicken breast, cut into 1.5 cm cubes
1 teaspoon ground cumin
1 teaspoon dried oregano
¼ teaspoon cayenne pepper
½ teaspoon salt
½ teaspoon freshly ground black pepper
3 cups canned cannellini beans, rinsed
¼ cup canned chopped green chili peppers
2 cups low-sodium chicken stock
Method
1. Heat the oil in a large pot over medium heat. Add the onion and cook for about 5 minutes, until softened. Stir in the garlic and cook for another 30 seconds.
2. Add the chicken, cumin, oregano, cayenne, salt and black pepper. Cook, stirring often, until the chicken is browned, about 8 minutes.
3. Add the cannellini beans, green chilies and chicken stock. Bring to a simmer, cover and cook for 20 minutes.
4. Remove the pot from the heat. Stir the Vars Skyr into the chili until fully incorporated.
Vars Skyr tip
For an extra creamy texture, blend about one third of the chili with the Vars Skyr after removing the pot from the heat, then stir the blended mixture back into the pot.
Because Vars Skyr is naturally high in protein and very low in fat, it gives this chili a creamy finish without needing cream.
